Chump chops are prepared from a boneless leg behind the loin by following its natural seams and then trimmed accordingly. They’re the equivalent to a beef rump steak left on the bone and are slightly bigger than cutlets or loin chops.

These are all very tender and will cook quickly. The whole loin, both sides of the Lamb roasted as a piece, is known as a Saddle of Lamb, this is a large joint for 8-10 people. Lamb Chump – This is on the lower back of the animal where the loin meets the leg.

Roast the lamb for 15 minutes, then turn the heat down to 200°C/gas mark 6 and continue roasting for 15 minutes per 500g. (So a 1kg half-leg of lamb will need 30 minutes, 45 in total)

Suitable for home freezing. Ideally freeze as soon as possible after purchase but always by ‘use by’ date shown. Follow the preparation guidelines above. Once defrosted use on the same day and do not refreeze. Keep refrigerated.

Cooking Instructions
Oven

Instructions: Temperature: 180, 160, 4
Remove all packaging and place fillets in a casserole dish along with your choice of stock and vegetables. Cover and place dish in centre of pre-heated oven for 1 hour and 30 minutes until tender.

Oven from frozen

Instructions: Not suitable for cooking from frozen.

Microwave

Instructions: Not suitable for microwave cooking.
